Experimental Batch #0000000

17:11hrs EST (5:11 p.m.) 9-March-2016

I got a TEENSY bit impatient last night and decided to start a brew with the minuscule amount of Raw Honey I had available at home (less than 5.5 grams).

I'm brewing it in the honey jar.

I filled the jar to 3" from the top with water, put the cap back on and shook the mixture VIGOROUSLY, waited about 10 minutes, and then added ¼ tsp of Red Star Bread Yeast and put plastic wrap (with 12 small holes punched in it) over the mouth of the jar and left it in an unused kitchen cabinet.

After that,
It's been cooking since 23:00 (11:00 p.m.), so roughly 18 hours.

It looks pretty good, so far, about 2/3 of the honey has dissolved and there's a VERY soft “fizzing" sound coming from the must.

I've set an alarm to go off on the 15th, giving the yeast a whole week to “work its magic", before I proceed with the next step.


18:35hrs (6:35 p.m.)

Should probably mention that I didn't add any spices to the mixture.


23:24hrs (11:24 p.m.)

It's been cooking for just over 24 hours and it already smells DELICIOUS!!

(It actually smells kinda like beer.)
